Asian Glazed Salmon and Greens

Delicious Asian Glazed Salmon and Greens

It’s all about the marinade for this delicious, healthy and super easy dinner! It’s been on my weekly meals menu for the last month and each time I have it, I love it more and more. (Did I say super easy!?)

INGREDIENTS

  • 400-450g salmon fillets
  • Green veggies to sautee e.g. chopped kale/silverbeet, broccoli, green beans, snow peas
  • Extra Virgin Olive Oil for sauteeing veggies

MARINADE INGREDIENTS

  • 1 tsp fresh ginger, grated
  • 1 garlic clove, crushed
  • 1 TBSP Tamari
  • 2 TBSP Oyster sauce
  • 1 1/2 TBSP maple syrup or honey
  • 1/2 TBSP Sriracha

METHOD

Combine marinade ingredients together and pour over salmon fillets to marinate in a bowl for approx. 30 mins (or however long you have – remember the longer the more flavour will infuse the salmon)

Place salmon a baking tray and into a heated oven (180C) for approx. 12-15 mins or until cooked to your liking – don’t over cook it or it’ll get too dry inside (nobody likes dry salmon!).
Whilst the salmon is cooking in the oven, start sautéeing your green veggies. Add some extra virgin olive oil into a heated pan then add your chopped greens. If you have any left over marinade from the salmon, you can add this to the veggies for a little extra flavour.

Serve with some basmati or brown rice and enjoy!
