These healthy apple donuts are my all time favourite snack. They have become a big hit amongst little (and big) kids! I’m often looking for more exciting ways to get more plant based foods (think fruit, nuts, seeds, veggies) into our diets and rather than a simple apple, It’s a great lunchbox or after school snack too. way to make a more satisfying and delicious afternoon snack
INGREDIENTS
- 1 apple
- Your favourite nut butter: I love almond butter or crunchy peanut butter but any will do
- Dessicated coconut
- Cacao nibs
- Goji Berries
METHOD:
- Slice the top and bottom from each apple and discard. Slice the apples into 2cm thick circles.
- Remove any seeds using an apple corer or a knife, making a whole in the centre to resemble a donut
- Spread almond butter on top of the apple slices
- Top with a combination of cacao nibs and coconut / goji berries and pumpkin seeds or any combination of nuts/seeds/granola you have in the pantry
- Enjoy!
Substitutions
Instead of using almond butter you could also top the apple slices with the following:
- Crunchy Peanut Butter
- ABC Spread
- Cashew Butter
- Sunflower Butter (nut free)
- Greek yoghurt
