Bodhi energY Balls
Ingredients:
(Makes approximately 12-15 )
- 1 cup raw almonds
- 1 cup fresh dates (pitted and chopped)
- 1/2 cup shredded coconut
- 2 TBSP chia seeds
- 2 TBSP pumpkin and sunflower seeds
- 2 TBSP organic raw cacao powder
- 1 TSP organic vanilla powder
- 1/2 TSP cinnamon
- 1 TBSP organic coconut oil (can add more if needed – will help moisten the mixture)
Method:
- Place nuts into the food processor (or blender if it’s a powerful one!) and pulse a few times until broken up into.
- Add the remaining ingredients and blend until combined.
- Empty mixture into a bowl.
- Roll into bite size balls and store in fridge or freezer
